Blueberry Muffins

IĀ get a lot of requests for these tasty muffins that have a light cake-like texture.

Ingredients

Blueberry Muffin2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or margarine, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla
1/2 cup milk
1 1/2 to 2 cups blueberries, fresh or frozen

Directions

  1. In a small bowl combine flour, baking powder and salt.
  2. In electric mixer bowl, beat butter until fluffy. Beat in the sugar and eggs. Add vanilla.
  3. Stir flour mixture into butter mixture, alternately with milk.
  4. Fold in blueberries.
  5. Fill muffin tins which have been greased or lined with paper muffin cups.
  6. Bake at 375 degrees F. for 25 to 30 minutes.
  7. Makes 12 regular size muffins.
