Banana Bread Pancakes
These are very hearty pancakes.
Ingredients
2 ripe bananas
2 eggs
1 1/2 cups milk
1/4 cup brown sugar
3 tablespoons butter, melted
2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
Directions
- Combine bananas, eggs, milk, brown sugar, butter and vanilla in food processor. Whirl until smooth.
- In a small bowl combine flour, baking powder, baking soda and salt. Pour over wet ingredients and whirl until smooth.
- Stir in walnuts if using. Let stand for 10 minutes.
- Heat griddle, and grease as required. Pour about 1/3 cup batter onto griddle for each pancake. Cook until brown on the bottom, flip and cook on other side. Makes about 12 pancakes.
