Artichoke Quiche Bites

A nice change from dips, these are cut in bite size squares and can just be picked up and eaten - no dipping and dripping required.

Ingredients

1/4 cup chopped onion
1 teaspoon minced garlic
1 tablespoon olive oil
2 jars (6 1/2 oz. each) marinated artichoke hearts, drained and chopped
4 eggs
1 teaspoon dried parsley
1/4 teaspoon dried oregano
Dash of hot pepper sauce
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups grated Cheddar cheese
1/3 cup crushed saltine crackers (about 10 crackers)

Directions

  1. In a small skillet, heat oil and saute onion and garlic until tender. Stir in artichokes. Remove from heat and set aside.
  2. In a large bowl, whisk the eggs. Add the seasonings, cheese, cracker crumbs and artichoke mixture. Stir to blend.
  3. Pour into a greased 9 inch square pan. Bake at 325 degrees F. for 25 to 30 minutes, until a knife inserted in the middle comes out clean.
  4. Cool for 10 minutes and cut into 1 inch squares.
