Cinnamon French Toast Casserole
My aunt’s friend from Wisconsin sent her this recipe. While it seems like a bit of work to make, you prepare it the night before, and in the morning you just have to add the topping and pop it in the oven.
Ingredients
Cooking Spray
1 loaf (1 lb) cinnamon bread (for about 16 cups cubes)
6 large eggs
1 1/2 cups half and half cream
1 1/2 cups reduced fat milk
1 teaspoon vanilla
5 tablespoons butter
3/4 cup chopped pecans or walnuts
Maple syrup to taste for serving
Sliced fresh strawberries or other fruit, optional
Directions
- Spray 9 x 13 inch glass or ceramic baking dish (that is safe to go into the oven when cold, such as Corning)
- Cut the bread into bite-size cubes. Place 1 1/2 cups of cubes in a quart-size zip-lock bag and set aside. Place remaining cubes in the baking dish.
- Whisk eggs well in a 2 quart bowl. Whisk in the cream, milk and vanilla until well combined. Pour over the bread cubes in casserole. Press the cubes down into the egg mixture to make sure they are all moistened.
- Cover casserole and refrigerate over night - for at least 8 hours or up to 24 hours.
- Preheat oven to 375 degrees F. Just before baking, place butter in a microwave safe dish, cover with a paper towel and microwave until almost melted, about 30 to 45 seconds. Remove from oven and stir until butter completely melts.
- Place nuts in the bag with reserved bread cubes. Pour melted butter into the bag, seal and shake until the bread and nuts are coated with butter.
- Uncover casserole and press the bread cubes down with the back of a spoon to remoisten. Scatter the bread-nut mixture evenly over the top.
- Bake the casserole, uncovered, until lightly brown on top and puffed, 45 to 50 minutes (the casserole will settle and deflate a bit as it stands.)
- To serve, cut into squares, place on plates and pass maple syrup to drizzle on top. Serve strawberries, or other fruit, on top or on the side, if desired.
Notes
Pepperidge Farm Cinnamon Swirl bread, with or without raisins, works well, according to the recipe. Here in Canada we have Sun-Maid Cinnamon Swirl Bread that should be good too.
