Cranberry Shortbread Cookies
Shortbread and cranberries - both Christmas icons - now try them together with a hint of orange.
Ingredients
1 cup butter, softened
3/4 cup icing (confectioners’) sugar
2 cups flour
1 teaspoon grated orange rind
3/4 cup dried cranberries
Directions
- Cream butter with electric mixer.
- Beat in icing sugar until light and fluffy.
- Add flour gradually and mix well after each addition.
- Stir in orange rind and dried cranberries.
- Roll dough into small balls, about 1 inch in diameter, and place 2 inches apart on ungreased cookie sheet. Press each ball down to flatten.
- Bake at 300 degrees F. for about 20 - 25 minutes, until just slightly browned. Remove cookies to a rack to cool.
