Cranberry Shortbread Cookies

Shortbread and cranberries - both Christmas icons - now try them together with a hint of orange.

Ingredients

Cranberry Shortbread1 cup butter, softened
3/4 cup icing (confectioners’) sugar
2 cups flour
1 teaspoon grated orange rind
3/4 cup dried cranberries

Directions

  1. Cream butter with electric mixer.
  2. Beat in icing sugar until light and fluffy.
  3. Add flour gradually and mix well after each addition.
  4. Stir in orange rind and dried cranberries.
  5. Roll dough into small balls, about 1 inch in diameter, and place 2 inches apart on ungreased cookie sheet. Press each ball down to flatten.
  6. Bake at 300 degrees F. for about 20 - 25 minutes, until just slightly browned. Remove cookies to a rack to cool.
