Oatmeal Shortbread

While not the fanciest looking cookies, these are rich, buttery and delicious.

Ingredients

Oatmeal Shortbread1 cup butter, softened
3/4 cup brown sugar
1 1/2 cups flour
1 1/2 cups quick rolled oats
3/4 teaspoon salt

Directions

  1. Cream butter and brown sugar with electric mixer until light and fluffy.
  2. In another bowl, combine flour, rolled oats and salt. Gradually add to butter mixture and beat to combine.
  3. Press dough into a greased 9 x 13 inch pan. Cut into 1″ x 3″ rectangles and prick with a fork.
  4. Bake at 325 degrees F. for 30 to 35 minutes until slightly browned.
  5. Let cool in pan for 10 minutes. Cut along markings and remove to rack to cool.
