Oatmeal Shortbread
While not the fanciest looking cookies, these are rich, buttery and delicious.
Ingredients
1 cup butter, softened
3/4 cup brown sugar
1 1/2 cups flour
1 1/2 cups quick rolled oats
3/4 teaspoon salt
Directions
- Cream butter and brown sugar with electric mixer until light and fluffy.
- In another bowl, combine flour, rolled oats and salt. Gradually add to butter mixture and beat to combine.
- Press dough into a greased 9 x 13 inch pan. Cut into 1″ x 3″ rectangles and prick with a fork.
- Bake at 325 degrees F. for 30 to 35 minutes until slightly browned.
- Let cool in pan for 10 minutes. Cut along markings and remove to rack to cool.
