Baked Crusted Halibut
Halibut with a tasty cheese crust coating, makes a quick and easy dish.
Ingredients
1/4 cup mayonnaise (regular or light)
1 tablespoon Dijon mustard
Juice of 1 lemon
1/2 cup soda cracker crumbs (or dry breadcrumbs)
1/4 cup grated Parmesan cheese
1 pound halibut fillets
Directions
- In a shallow dish mix together mayonnaise, mustard and lemon juice.
- In another shallow dish mix together cracker crumbs and Parmesan cheese.
- Roll halibut fillets in mayonnaise mixture, then roll in dry mixture to coat on both sides. Place in a lightly greased baking dish. Bake at 425 degrees F for about 15 minutes, until fish flakes easily with a fork. Serve with lemon wedges if desired. Makes 4 servings.
Notes
I made this in the toaster oven, so it got quite crispy on top just by baking. If you are doing it in the regular oven, you may want to broil for a couple minutes.
