LO-CARB Curry Chicken

I only made this for one person - so here’s the recipe for that.

Ingredients

1/4 can coconut milk
1 tablespoon of heavy whipped cream
1 teaspoon curry powder
1 teaspoon ginger
1 teaspoon salt (or to taste)
1/4 small white onion sliced
1 tablespoon garlic
2 chicken thighs (skinless/boneless) cut up into chunks
1 cup fresh spinach

Directions

  1. If your chicken is not cooked prior to this, brown in olive oil until cooked.
  2. In a bowl, combine coconut milk, cream, curry, ginger and salt.
  3. In olive oil, sautee onion until soft. Slowly add in chicken and garlic. After chicken is browned, pour in cream mixture.
  4. Cook on low for approximately 20 minutes, stirring. Before serving, add in fresh spinach. If you like your curry a little sweetened, add in one small packet of Splenda. Makes 1 serving
