LO-CARB Curry Chicken
I only made this for one person - so here’s the recipe for that.
Ingredients
1/4 can coconut milk
1 tablespoon of heavy whipped cream
1 teaspoon curry powder
1 teaspoon ginger
1 teaspoon salt (or to taste)
1/4 small white onion sliced
1 tablespoon garlic
2 chicken thighs (skinless/boneless) cut up into chunks
1 cup fresh spinach
Directions
- If your chicken is not cooked prior to this, brown in olive oil until cooked.
- In a bowl, combine coconut milk, cream, curry, ginger and salt.
- In olive oil, sautee onion until soft. Slowly add in chicken and garlic. After chicken is browned, pour in cream mixture.
- Cook on low for approximately 20 minutes, stirring. Before serving, add in fresh spinach. If you like your curry a little sweetened, add in one small packet of Splenda. Makes 1 serving
