Warm Crab and Spinach Spread

A tasty “low fat” appetizer.

Ingredients

Crab and Spinach Spread1 cup low fat cottage cheese
1 package (8oz/250g) light cream cheese, softened
1/2 cup light Cheddar cheese, shredded
1/2 cup onion, minced
1 tablespoon lemon juice
2 teaspoons Worchestershire sauce
2 teaspoons Dijon mustard
2 cloves garlic, minced
2-3 dashes hot pepper sauce
5 oz. spinach, cooked, well drained and chopped
1 package (340 g) imitation crab meat

Directions

  1. In food processor, blend cottage cheese and cream cheese together until smooth.
  2. Add Cheddar cheese, onion, lemon juice, Worchestershire sauce, mustard, garlic and hot sauce. Whirl briefy to blend in.
  3. Add spinach and crab and whirl briefly to combine - mixture should still remain chunky.
  4. Spray a shallow baking pan with non-stick cooking spray. I used a 10 inch round tart pan. Spread mixture in pan, cover with foil and bake at 350 degrees F for about 30 minutes until heated through.
  5. Remove from oven and let cool, uncovered, for about 10 minutes before serving.
  6. Serve with slices of baguette or crackers to spread on.

Note

Can be made a few hours in advance and refrigerated before baking. Remove from fridge and bring to room temperature before baking, or add a few minutes to the baking time.
