Warm Crab and Spinach Spread
A tasty “low fat” appetizer.
Ingredients
1 cup low fat cottage cheese
1 package (8oz/250g) light cream cheese, softened
1/2 cup light Cheddar cheese, shredded
1/2 cup onion, minced
1 tablespoon lemon juice
2 teaspoons Worchestershire sauce
2 teaspoons Dijon mustard
2 cloves garlic, minced
2-3 dashes hot pepper sauce
5 oz. spinach, cooked, well drained and chopped
1 package (340 g) imitation crab meat
Directions
- In food processor, blend cottage cheese and cream cheese together until smooth.
- Add Cheddar cheese, onion, lemon juice, Worchestershire sauce, mustard, garlic and hot sauce. Whirl briefy to blend in.
- Add spinach and crab and whirl briefly to combine - mixture should still remain chunky.
- Spray a shallow baking pan with non-stick cooking spray. I used a 10 inch round tart pan. Spread mixture in pan, cover with foil and bake at 350 degrees F for about 30 minutes until heated through.
- Remove from oven and let cool, uncovered, for about 10 minutes before serving.
- Serve with slices of baguette or crackers to spread on.
Note
Can be made a few hours in advance and refrigerated before baking. Remove from fridge and bring to room temperature before baking, or add a few minutes to the baking time.
