Graham Muffins
These are good plain, or with butter and jam or cheese.
Ingredients
1 cup sour cream
1 teaspoon baking soda
1/3 cup butter, softened
1/2 cup sugar
2Â eggs
1 cup flour
1 cup graham wafer crumbs
1 teaspoon baking powder
1/2 teaspoon salt
Directions
- Mix sour cream and baking soda together in a small bowl (it will double in size).
- With electric mixer, cream butter and sugar. Add eggs and beat until light.
- In a small bowl mix flour, graham wafer crumbs, baking powder and salt. Add to creamed mixture alternately with sour cream mixture, beating after each addition.
- Fill greased or paper-lined muffin cups. Bake at 350 degrees F for 20 to 25 minutes.
