Lemon Coffee Cake
Ingredients
Cake:
1 cup plain yogurt or sour cream
1 teaspoon baking soda
1/2 cup butter, softened
1 cup sugar
2 eggs
Grated rind of 1 lemon
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
Filling:
1/2 cup brown sugar
1 tablespoon cinnamon
Icing:
1 cup icing (confectioners’) sugar
3 tablespoons lemon juice
Directions
Cake:
- Combine yogurt and baking soda and set aside. Mixture will expand to around double the volume - I mix it in a 2 cup measuring cup.
- In mixer bowl combine butter and sugar and beat until fluffy. Add eggs and beat until light. Stir in lemon rind.
- In a small bowl combine flour, baking powder and salt. Add to creamed mixture gradually with yogurt mixture, combining after each addition.
Filling:
- Combine brown sugar and cinnamon. Spread half of the cake batter in a greased 9 inch springform cake pan. Sprinkle half of the filling over top. Spread remaining cake batter and top with remaining filling.
- Bake at 350 degrees F for 45 to 50 minutes. Cool on wire rack and then remove cake to cake plate.
Icing:
- Combine icing sugar and lemon juice and beat until smooth. Drizzle over cake.
