Grilled Lemon Chicken

A great multi-purpose recipe, serve on its own or in a sandwich, or slice over Caesar salad or other salad. Leftovers are also good cold.

Ingredients

Grilled Lemon Chicken3 tablespoons lemon juice
3 tablespoons olive oil
1 clove garlic, minced
1/4 teaspoon dried thyme
Freshly ground pepper
1 pound boneless skinless chicken breasts

Directions

  1. Combine lemon juice, olive oil, garlic, thyme and pepper.
  2. Place chicken breasts in a shallow dish. Pour lemon juice mixture over and turn chicken to coat.
  3. Refrigerate for 1-3 hours to marinate, turning chicken occasionally.
  4. Heat barbecue, grease grill and cook chicken for about 5-10 minutes per side. Cooking time will depend on the thickness of your chicken pieces and heat of grill. Chicken should feel firm to the touch when done.
