Rhubarb Oatmeal Muffins
Ingredients
1 cup flour
1 cup rolled oats
1/3 cup brown sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup diced rhubarb (1/4″ pieces)
1 egg
3/4 cup milk
1 teaspoon vanilla
3 tablespoons melted butter
Directions
- In a large bowl, mix together flour, rolled oats, brown sugar, baking powder, salt and cinnamon. Stir in rhubarb.
- In a small bowl, beat egg. Stir in milk, vanilla and butter. Add to dry ingredients and stir just enough to blend.
- Spoon batter into greased or paper lined muffin cups and bake at 375 degrees F. for 25 to 30 minutes.
