Strawberry Daiquiri Popsicles

Popsicles for grown-ups! This recipe comes from Homemakers magazine summer 2007 issue. I make these when our fresh local strawberries are available - they are tastier than the imported strawberries we get the rest of the year.

Ingredients

Strawberry Daiquiri Popsicle3 cups hulled strawberries
1/3 cup rum
1/4 cup sugar
3 tablespoons lime juice
1/4 cup water

Directions

  1. Combine all ingredients in blender, and puree until smooth and sugar is dissolved.
  2. Pour into popsicle molds and insert sticks. Freeze until firm - at least 4 hours or overnight.

Note

To remove popsicles from molds, dip bottom of the mold in hot water for a few seconds.

    Depends on the size of your popsicle molds - mine made 8 (and a half).
