Sushi Salad

If you like California Rolls, give this salad a try.

Ingredients

Sushi Salad1 cup white rice
1 English cucumber, peeled and cubed
1-2 avocados, peeled and cubed
1 package (227 g) imitation crab meat, coarsely chopped
1-2 tablespoons chopped pickled ginger
1/4 cup rice vinegar
1 tablespoon mayonnaise
1 tablespoon soy sauce
1 tablespoon white sugar
2 teaspoons wasabi paste
1 tablespoon sesame seeds

Directions

  1. Cook rice according to package directions. Set aside to cool.
  2. Combine cooled rice with cucumber, avocado, crab meat and pickled ginger.
  3. Whisk together rice vinegar, soy sauce, mayonnaise, sugar and wasabi paste. Pour over rice mixture and toss to blend. Sprinkle sesame seeds over top. Makes 6 to 8 servings.
