Tropical Muffins

I had a can of pineapple that I wanted to use, and I came up with this tasty muffin.

Ingredients

Tropical Muffin1 1/2 cups flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup melted butter
3/4 cup plain yogurt
1 egg, beaten
1 teaspoon vanilla
1 can (14 oz/398ml) crushed pineapple, drained

Topping:
3 tablespoons flour
3 tablespoons brown sugar
1/4 teaspoon cinnamon
3 tablespoons cold butter
1/4 cup flaked coconut

Directions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
  2. In another bowl, combine melted butter, egg, yogurt and vanilla. Add to flour mixture and stir to combine.
  3. Fold in pineapple.
  4. Spoon batter into greased or paper lined muffin cups.
  5. Topping: combine flour, brown sugar and cinnamon. Cut in butter until crumbly (can use a small food processor for this).
  6. Stir in coconut. Sprinkle topping over muffins.
  7. Bake at 375 degrees F for 20-25 minutes.
