Tropical Muffins
I had a can of pineapple that I wanted to use, and I came up with this tasty muffin.
Ingredients
1 1/2 cups flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup melted butter
3/4 cup plain yogurt
1 egg, beaten
1 teaspoon vanilla
1 can (14 oz/398ml) crushed pineapple, drained
Topping:
3 tablespoons flour
3 tablespoons brown sugar
1/4 teaspoon cinnamon
3 tablespoons cold butter
1/4 cup flaked coconut
Directions
- In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
- In another bowl, combine melted butter, egg, yogurt and vanilla. Add to flour mixture and stir to combine.
- Fold in pineapple.
- Spoon batter into greased or paper lined muffin cups.
- Topping: combine flour, brown sugar and cinnamon. Cut in butter until crumbly (can use a small food processor for this).
- Stir in coconut. Sprinkle topping over muffins.
- Bake at 375 degrees F for 20-25 minutes.
