Peanut Butter Chocolate Cheesecake

For peanut butter and chocolate lovers, so good and easy to make too.

Ingredients

Peanut Butter CheesecakeCrust:
2 cups chocolate wafer crumbs
1/3 cup melted butter

Filling:
12 oz. (375 g.) cream cheese, softened
1 1/2 cups peanut butter
1 cup sugar
1 cup whipping cream

Topping:
1/2 cup sugar
1/2 cup whipping cream
1 teaspoon vanilla
4 (1 oz.) squares semi-sweet chocolate
1/4 cup butter

Directions

Crust:

  1. Combine crumbs and melted butter. Press into the bottom of a 10 inch springform pan.
  2. Bake at 350 degrees F. for 10 minutes. Remove from oven and cool completely before adding filling.

Filling:

  1. Combine cream cheese, peanut butter and sugar in a large mixer bowl. Beat until light and fluffy.
  2. Whip cream and fold in to peanut butter mixture. Pour over cooled crust. Refrigerate overnight.

Topping:

  1. In the morning, combine sugar, cream and vanilla in saucepan. Stir to blend. Place over medium high heat and bring to a boil. Reduce heat and simmer for 5 minutes - do not stir.
  2. Remove from heat and add chocolate and butter. Stir until chocolate has melted, and the mixture is slightly thickened - about 5 minutes. Pour over filling. Chill several more hours before serving.
