Potato Salad
Ingredients
1 1/2 pounds small potatoes
1/4 cup balsamic vinaigrette salad dressing
3 strips bacon, chopped and cooked until crisp
3 green onions, chopped
1/4 cup chopped fresh basil
1/2 cup cherry tomatoes, cut in half
1/4 cup mayonnaise
2 teaspoons prepared mustard
Directions
- Wash potatoes and cut into 1 inch chunks. Cook potatoes in boling water for 10-12 minutes, until tender.
- Drain potatoes, place in bowl and toss with balsamic vinaigrette while still warm. Allow to cool.
- When potatoes have cooled, add bacon, onions, basil and tomatoes.
- Stir mayonnaise and mustard together and toss with potato mixture. Refrigerate. Makes about 6 servings.
