Potato Salad

Ingredients

Potato Salad1 1/2 pounds small potatoes
1/4 cup balsamic vinaigrette salad dressing
3 strips bacon, chopped and cooked until crisp
3 green onions, chopped
1/4 cup chopped fresh basil
1/2 cup cherry tomatoes, cut in half
1/4 cup mayonnaise
2 teaspoons prepared mustard

Directions

  1. Wash potatoes and cut into 1 inch chunks. Cook potatoes in boling water for 10-12 minutes, until tender.
  2. Drain potatoes, place in bowl and toss with balsamic vinaigrette while still warm. Allow to cool.
  3. When potatoes have cooled, add bacon, onions, basil and tomatoes.
  4. Stir mayonnaise and mustard together and toss with potato mixture. Refrigerate. Makes about 6 servings.
