Vanilla Ice Cream
I came across variations on this recipe when looking for a way to make Dairy Queen ice cream at home. I tried it and it is very good served immediately while it has the consistency of soft ice cream, but it is also great fully frozen.
Ingredients
1 envelope plain gelatin
1/4 cup cold water
2 cups whole milk
1 cup sugar
2 teaspoons vanilla
1/4 teaspoon salt
1 1/2 cups whipping cream
Directions
- In a large bowl, sprinkle gelatin over water and let stand for 5 minutes.
- In a saucepan, heat milk over medium heat until hot but not boiling. Remove from heat.
- Stir in sugar, vanilla and salt and whisk until sugar is completely dissolved, about 2 minutes.
- Add the milk mixture to the gelatin and whisk until smooth. Whisk in whipping cream.
- Refrigerate mixture for at least 6 hours.
- Pour chilled mixture into your ice cream maker, and proceed according to the directions for your ice cream maker.
- For soft serve ice cream (similar to Dairy Queen ice cream) serve immediately. For regular ice cream, place in the freezer for 2 or more hours until firm. Makes about 8 servings.
