Vanilla Ice Cream

I came across variations on this recipe when looking for a way to make Dairy Queen ice cream at home.  I tried it and it is very good served immediately while it has the consistency of soft ice cream, but it is also great fully frozen.

Ingredients

Vanilla Ice Cream1 envelope plain gelatin
1/4 cup cold water
2 cups whole milk
1 cup sugar
2 teaspoons vanilla
1/4 teaspoon salt
1 1/2 cups whipping cream

Directions

  1. In a large bowl, sprinkle gelatin over water and let stand for 5 minutes.
  2. In a saucepan, heat milk over medium heat until hot but not boiling. Remove from heat.
  3. Stir in sugar, vanilla and salt and whisk until sugar is completely dissolved, about 2 minutes.
  4. Add the milk mixture to the gelatin and whisk until smooth. Whisk in whipping cream.
  5. Refrigerate mixture for at least 6 hours.
  6. Pour chilled mixture into your ice cream maker, and proceed according to the directions for your ice cream maker.
  7. For soft serve ice cream (similar to Dairy Queen ice cream) serve immediately. For regular ice cream, place in the freezer for 2 or more hours until firm. Makes about 8 servings.
