Light Garden Salad

Ingredients 

1 Large sweet onion
1 large cucumber (peeled)
1 red or green bell pepper
2 cups (1 package) of cherry or grape tomatoes
1/4 cup dried dill
1/4 cup apple cider vinegar
1 Tsp. fresh crushed garlic
1/4 tsp. salt and pepper

Directions

  1. Cut and thinly slice onion, cucumber, and bell pepper.
  2. In a bowl mix dill, vinegar, garlic, salt and pepper. Add vegetables, cover and chill for no less than one hour.
