Berry Burst Muffins
Fresh berries were plentiful at the local market, so I made these muffins.
Ingredients
2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Grated rind of 1 lemon
2 eggs, lightly beaten
1 cup plain yogurt
1/4 cup melted butter
1 teaspoon vanilla
1/2 cup strawberries, cut in small chunks
1/2 cup raspberries
1/2 cup blueberries
Directions
- In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in lemon peel.
- In another bowl, combine eggs, yogurt, butter and vanilla. Pour over the dry ingredients and stir just to moisten.
- Fold in berries.
- Spoon batter into greased or paper lined muffin cups. Bake at 400 degrees F. for 18 to 20 minutes.
