Berry Burst Muffins

Fresh berries were plentiful at the local market, so I made these muffins.

Ingredients

Berry Burst Muffin2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Grated rind of 1 lemon
2 eggs, lightly beaten
1 cup plain yogurt
1/4 cup melted butter
1 teaspoon vanilla
1/2 cup strawberries, cut in small chunks
1/2 cup raspberries
1/2 cup blueberries

Directions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in lemon peel.
  2. In another bowl, combine eggs, yogurt, butter and vanilla. Pour over the dry ingredients and stir just to moisten.
  3. Fold in berries.
  4. Spoon batter into greased or paper lined muffin cups. Bake at 400 degrees F. for 18 to 20 minutes.
