Honey Oatmeal Bread

Ingredients

Honey Oatmeal Bread2 cups boiling water
1 cup rolled oats
1/2 cup honey
1/3 cup butter
2 teaspoons salt
1/4 cup warm water (110 degrees F.)
1 teaspoon sugar
2 packages active dry yeast
1 egg
5 1/2 - 6 1/2 cups bread flour

Directions

  1. In large mixer bowl, combine boiling water, oats, honey, butter and salt. Allow to stand for 1 hour.
  2. In a small bowl, stir together warm water and 1 teaspoon sugar. Stir in yeast and allow to sit for 10 minutes.
  3. Add egg to oat mixture and beat in. Add yeast mixture and 4 cups flour. Mix at low speed, using dough hook attachment, for about 2 minutes, until dough forms a ball and pulls away from sides of bowl. During this time, gradually add enough additional flour to form a soft dough. Knead on low speed for about 2 minutes more.
  4. Place dough in a greased bowl, and turn over to grease top. Cover and let rise in a warm place, until doubled in volume, about 1 hour.
  5. Punch down dough and divide into 2 pieces. Form each into a loaf. Place in greased 8 1/2″ x 4 1/2″ loaf pans.   Cover and let rise until doubled in volume - about 40 -60 minutes.
  6. Bake at 375 degrees F. for about 30 minutes, until tops are golden brown and loaf sounds hollow when tapped. Remove immediately from pans and cool on wire rack.

    I’m not sure if I let it rise too long or not but found this bread a little yeasty tasting will time my rising next time and see if that helps. Hubby loved this bread.
