Cranberry Orange Muffins
Cranberry and orange just go so well together.
Ingredients
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1 tablespoon grated orange rind
2/3 cup orange juice
1/2 cup melted butter or margarine
2 eggs, lightly beaten
1 1/2 cups fresh or frozen cranberries
Directions
- In large mixing bowl, combine flour, baking powder, baking soda, salt and sugar. Stir in grated orange peel.
- In another bowl, combine juice, melted butter, and eggs. Make a well in the dry ingredients, and fold in the wet ingredients until just combined.
- Fold in cranberries. Pour batter into greased or paper lined muffin cups. Bake at 350 degrees F for 20-25 minutes. Makes 10-12 muffins.
