Cranberry Orange Muffins

Cranberry and orange just go so well together.

Ingredients

2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1 tablespoon grated orange rind
2/3 cup orange juice
1/2 cup melted butter or margarine
2 eggs, lightly beaten
1 1/2 cups fresh or frozen cranberries

Directions

  1. In large mixing bowl, combine flour, baking powder, baking soda, salt and sugar. Stir in grated orange peel.
  2. In another bowl, combine juice, melted butter, and eggs. Make a well in the dry ingredients, and fold in the wet ingredients until just combined.
  3. Fold in cranberries. Pour batter into greased or paper lined muffin cups. Bake at 350 degrees F for 20-25 minutes. Makes 10-12 muffins.
